Basil Pesto
Traditional Pesto Genovese, made with my recipe, it is packed with flavor. This is great on just about anything as a finish, used as a quick marinade on some vegetables before they hit the grill, a garnish for omelettes, and even as a sandwich spread.

Ingredients: Basil, Extra virgin olive oil, Spinach (for chlorophyll), Garlic cloves , Reggiano parmesan, Pignioli, Sea salt

Dried Tomato Pesto
Made with my dried tomatoes, this pesto has a very concentrated flavor. A dollop would be a great condiment for just cooked pasta, roasted meats, or as part of a marinade.

Ingredients: Dried tomatoes, Extra virgin olive oil, Basil, Oregano, Garlic, Sea salt

Olivada
This traditional condiment originated in Italy. I make mine with Kalamata olives, garlic, capers, a bit of fresh basil, and a generous amount of virgin olive oil. It is very zesty and makes a great condiment for roasted meats or a spread for some nice crusty bread.
